Estate-Bottled adj
A term that indicates a wine was produced and bottled by the vineyard’s owner. Today many wines are produced from grapes that were purchased on the open market, often for the lowest price. An estate-bottled designation assures that the winery had control over the grapes from the beginning to the end of production so that they could produce a high quality wine. The French term domaine has the same meaning.
Lake Mary Store Opening!

Chardonnay is the world’s best selling white wine and is made from the grape that shares its name. This variety of grape is a cross between a Pinot and a very old, nearly extinct grape from Croatia, Gouais Blanc. French growers have cloned 34 varieties of Chardonnay over the years to improve vine productivity, impart specific flavors and reduce susceptibility to disease. Today, Chardonnay vineyards flourish worldwide, particularly in climates with warm sunny days and cool nights.
To understand the mass appeal of Chardonnay, pop the cork on a bottle of Andrew Peace Chardonnay, an estate-bottled Australian wine that is crisp, elegant and bursting with tropical fruit flavors. Peace Chardonnay is made from grapes that are harvested at three different levels of maturity; early, medium, and late harvest fruit. What makes Chardonnay taste buttery?
When wine undergoes secondary fermentation, it allows bacteria to convert malactic acid (the same acid found in apples) into lactic acid (the same acid found in milk and butter). This typically takes place in oak barrels and can be what gives many wines, most commonly Chardonnay, a seemingly buttery taste.

Suggested Wine: Andrew Peace Chardonnay
Blanquette de Veau
White Veal Stew
Serves 6
Ingredients, listed in order of use:
2 ½ lbs. veal stew meat, cut into 1” pieces
1 cup pearl onions, peeled
3 medium carrots, peeled, cut into 1” pieces
1 cup dry white wine
2 14.5 oz. cans low-sodium chicken broth
1 bay leaf
½ teaspoon dried thyme, crushed
3 tablespoon butter
3 tablespoon all-purpose flour
¾ cup whipping cream
1 10 oz. package frozen peas, thawed, drained
Natural sea salt and freshly ground black pepper
Chopped fresh chives to garnish (optional)
Equipment: large stockpot or Dutch oven with lid, 1 quart saucepan or small skillet
Prep time: 5 minutes
Start to finish: 1 hour
Place veal, onions, carrots, white wine, chicken broth, bay leaf and thyme in stock pot and bring to a boil over medium-high heat. Skim any foam that rises to surface, reduce heat to low and simmer gently 45 minutes.
Remove one cup of cooking liquid from veal and set aside. Melt butter in a small saucepan over medium heat. Add flour and cook gently until flour is golden brown. Add cooking liquid from veal, a little at a time, stirring constantly with a wooden spoon so sauce is smooth. Add whipping cream and stir until smooth.
Add cream sauce and peas to veal. Increase heat to medium, stir well and heat through, about 5 minutes. Season to taste with sea salt and pepper and serve over white rice topped with chopped chives, if desired. Bon Appetite!

Collecting bottle labels is a great way to remember the wines you like best. Fill the empty bottle with very hot water until the water level is higher than the label. Place the bottle in a tall container and fill with very hot water until the label is completely submerged. After a few minutes, remove the bottle from the container and dry carefully. Starting with the back label, slide a straight-edged razor blade between the label and the bottle. If the back label detaches without separating, the front label is ready to be removed.
