The Humble Sprout
~ often misunderstood and almost always misspelled.

At only 10 calories a piece, Brussels Sprouts are a bargain.  They’re low in fat and sodium, high in dietary fiber, antioxidants, vitamin C, foliate, beta carotene and vitamin E. They are cholesterol free, as well as YUM delicious.

They have proven health benefits in the field of cancer prevention and have shown that they help prevent macular degeneration (a leading cause in blindness).    

Brussels Sprouts are part of the Brassica Family and therefore cousin to broccoli as well as cabbage. They grow in bunches of 20 to 40 on the stem of a plant that grows from two to three feet tall.

In the late 1500’s, Brussels Spouts became a popular delicacy in Belgium, and are therefore named after their capital, Brussels.  In the 1700’s Captain Cook ordered his crew to eat sprouts, as well as limes to battle scurvy. (Do you think the chef on his ship knew about stir-frying?)

Brussels sprouts are commonly misspelled and mispronounced as "Brussel sprouts."

Brussels Tips!

  • Your Brussels Sprouts should be firm, compact, bright green and no larger than a walnut.
  • Small sprouts have a more tender texture, and the tight heads indicate freshness.
  • Be sure to choose Brussels Sprouts that are a good green color. Avoid puffy, wilted, or yellow sprouts.
  • Texture should be firm, leaves compact, and by all means - butt ends clean.
  • Prepare sprouts by washing and then removing any yellow leaves.
  • Refrigerate unwashed in a plastic bag and use within 3 days.
  • Freeze Brussels Sprouts for long-term storage. Blanch the sprouts for 3-5 minutes and immediately rinse in cold water before draining and storing in an air-tight container.
  • Boil sprouts for 5-6 minutes, add salt and pepper to season and toss in a touch of (one teaspoon) garlic butter and a few herbs.
    Or toss with a teaspoon of olive oil.
  • Stir-fry in any kind of nut oil (Hazelnut or Walnut oil is good) for 2 minutes; then add a couple of tablespoons of water, cover and bring to the boil. Simmer for a couple of minutes – until sprouts are tender.  You sure don’t want to overcook ‘em and make them mushy.  When done, sprinkle a few pine nuts on them.

Brussels Sprouts Royale - Fit for a Queen or a Lady!

Ingredients: 1 lb onions, sliced thin * 1 tablespoon butter * 1 tablespoon sugar * 1 lb brussels sprouts, trimmed and halved * 1 generous sprig of thyme * 2 pints low-fat chicken or vegetable stock * salt * freshly ground black pepper * Serve with reduced-fat sour cream or plain low-fat yogurt * cayenne pepper

Instructions: Place onions into a pan with the butter, cover and sweat over a gentle heat forever - a long time - I lost track of the time. Just let it sweat until the onions are very tender and soft.  * Sprinkle the sugar over the onions and cook, uncovered, for another 10-15 minutes until the onions are lightly colored and look a little like jam. * Add the sprouts and thyme and stir around. * Pour in the stock and season with salt and pepper. Bring to the boil and simmer for about ten minutes until the sprouts are just tender. * Cool slightly, remove the thyme sprig, then liquidize in two batches. * Reheat gently if necessary and adjust seasoning. * Serve piping hot with a spoonful sour cream or yogurt with a dash of cayenne pepper.

Orange Cookies ... As I was talking about the Color Orange in last week's KICK, I was intrigued when I saw a recipe for Orange Cookies in a recent issue of Lifescripts newsletter.  I am predisposed to assume that cookies are at least 160 calories, each, and while these cookies are not 10 calories each, they are a mere 92 calories, and they are called Good Luck Cookies, which also tugged at my emotional core.  Aren't names interesting?  If YOU really believed that a 92 calorie would bring you good luck, would you include it in your day's calorie total?  Or is that too much of a caloric spend?  What are your limits?  How intriguing are cookies?  And, do you have any holiday cookie recipes that are only 10 calories each?  Do tell!

Dear OLofWL ~  I'm looking for help, but I am not sure if I'm someone you would want to help. I don't have a lot of money...nor a lot of discipline right now. I need a kick start. I have demonstrated great discipline in my life...but struggle to get to an "ideal" weight. I'm 5' 9.5" -- 168 lbs, age 49, huge amount of (self-induced) stress, frustrated athlete who had early hip replacement (2 years ago).  I need support, but am not sure what that means. I believe in self-motivation, keeping the attitude RIGHT. Still interested in me? Let me know. If I don't hear back, I understand. No problem.  ~ L.

Dear L ~ Get ready for a kick start and more.  First: If you DO think you can achieve your goals you are right. Believe in yourself. If you have demonstrated great discipline before, you can do it again. Next: There is no ideal weight; there is no ideal plan.  If you want to lose weight, follow a sensible food plan, and take off 5 pounds and then re-evaluate. Small weight losses improve health dramatically.  And finally: Support is huge. There are plenty of groups to join; in-person and on-line (the KITT Club will be up and running on BeliefNet within the next few weeks - and there will be chat boards and more!).  Get involved in one.  - Consider yourself kicked.  Get goin' girl ... and let us know which food plan you've decided to follow. Dear OLofWL - I've lost a lot of weight quite a few times, but in the last 3 or 4 years I have really packed on the pounds, and I am alarmed and sickened by what I'm doing to myself. I hate the way I look - FAT - and yet, I can't stop the eating. I am feeling depressed and unmotivated in all aspects of my life - my job, my family, my husband.  I'm hoping you can point me in a direction that will help me with this mental attitude.  I have the tools to do what I need to - just not the mental and emotional fortitude right now. Dear A ~ The real you is hiding out inside you, just busting to come out.  I'm guessing that might add to your feelings of depression.  Think about all the things that make you happy; dreams that you might have - goals.  And how losing weight can help to change other aspects of your life.  Perhaps a different job.  I have to tell you.  If you change, others around you will change and could be for the better.  So concentrate on yourself! Dear OLofWL,  I just want to remind everyone that there are organizations that feed the homeless and many have put out requests for leftover Halloween candy.  They like to give the people they serve a sweet treat with each meal and with the leftover Halloween candy that gets donated to them (along with smaller amounts of Valentine and Easter candy), they never have to purchase candy and can use those funds for other things. What a great way to rid yourself of temptation and help others! ~ Chris C.
