Happy Weight Loss
Hi Tushketeers ~ My head is spinning from all that has happened this week. The deaths of Farrah Fawcett and Michael Jackson, Governor Sanford's disappearance and affair, Elizabeth Hasselbeck's alleged plagiarism, on top of the usual steady stream of 'hard' news. I spent a some time reflecting on 'life,' and in the process stumbled upon a few philosophical quotes that helped me make some sense of it all. (See this week's Motivational Musings: Michael Jackson below).
On the lighter side, my cat 'went missing' for 36 hours. We were sure she'd jumped ship (out a window that was open). I checked the streets (fearing splattered cat - YUK!), the closets, under the bed, in between the towels in the linen closet ... no cat! I meowed; no answer. And then out of no where - a day and a half later - Rayne plops on the bed, without explanation!
I was relieved, of course, but still pent up with worrisome energy, so I set out on a purposeful walk to the Farmer's Market across town and back (through Morningside Park which includes winding stairways to get to the other side - wow, what a workout!). Once there, I picked up some Garlic Scape, just because it's curly and I was clueless as to what one might do with it! (See Righteous Recipe below).
And last but certainly not least, my email box was filled with happy news. Adriana, Tushkateer extraordinaire, forwarded me Oprah's Book Club newsletter, which named
Our Lady of Weight Loss: Miraculous and Motivational Musings from the Patron Saint of Permanent Fat Removal one of Oprah's Book Club picks for Summer Reading 2009. A very nice feather in Our Lady's cap. Praise be and Amen! a MUST READ, in case you haven't already, plus it's on sale: Bargain @ only $8!

Michael Jackson: On the complexities of being human.
As reports begin to filter in on the behind the scenes life of Michael Jackson, his alleged addiction to Demerol (a narcotic painkiller) and possible cause of death, his rumored marriage to Rwaramba (the children's nanny), the number of plastic surgery procedures undergone, his court appearances regarding his alleged inappropriate behavior with young boys, his shyness and insecurities, and his undeniable talent - on a level that comes but once in a lifetime - that has been and will continue to be a meaningful part of our lives, one does wonder about the complexity of the human being and what it is all about.
The meaning of life has been the subject of much philosophical, religious, scientific and spiritual debate throughout history. And in this time of death, we find ourselves wondering ...

Chewing the Fat
Dear OLofWL ~ I am scheduled to have gastric bypass surgery in two weeks. I've tried every conceivable diet plan ever. I was able to lose the weight - on all the plans, but eventually I gained it all back plus some. It is my hope that the gastric bypass will force me into getting my life on track. Do you think gastric bypass is the answer? ~ G.M.
Dear G.M. ~ Gastric bypass may help you to lose the weight, but it is NOT the whole enchilada, so to speak. Many a client I have worked with has undergone surgery, lost an enormous amount of weight and then gained it back. Once again, it's not about the fat or the food, it's about your mind. If you do not go inside (and I don't mean via surgery) and change the way you think, change your perspective, take on your 'real' challenges, you may well find yourself contacting me a year or two or even three from now with a sorry gastric bypass tale. Gastric bypass or not, as Einstein says, "You cannot change a problem with the same mind that created it." Beware, my friend. It's not about the fat, the food or the surgery. It's about YOU! We are here for you. Please let me know what you decide and how we can support you. ~ OLofWL

Dear Melissa C. ~ Our Lady of Weight Loss is about letting go of all weighty issues; she's about lightening up and being your best self. The fact that you find her/me funny and good is great! As for your skinniness ... you might want to explore putting avocado, peanut butter on everything (unless allergic!). These foods are natural foods, high in fat and calories that are good for you! :) Eat Healthy! ~ OLofWL

Dear OLofWL ~ Am I missing something? In last week's recipe - Cucumber Extraordinaire called for "evaporated sugar." What is "evaporated sugar?" ~ Debby
Dear Debby ~ Recently, when teaching "Our Lady of Weight Loss enLIGHTens" at Omega Institute for Holistic Studies and eating at their oh-so-fabulous healthy dining hall, I noticed that instead of sugar, they used 'evaporated cane sugar' or 'evaporated cane juice.'
Evaporated cane sugar does not undergo the same processing as refined sugar. It's unclear to me if it is that much better, however, I'm thinking that anything that is less refined is a better choice! Thanks for asking. ~ OLofWL

Righteous Recipe
Garlic Scape Pesto
Ingredients: 10 garlic scapes, finely chopped (top flowery part removed) * 1/4 cup grated parmigiano cheese * 1/3 cup olive oil * 1/3 cup slivered almonds (toasted lightly) * Sea salt to taste * Black pepper to taste
Instructions: Place scapes and almonds in the bowl of a food processor and whiz until well combined and somewhat smooth. Slowly drizzle in oil and process until integrated. With a rubber spatula, scoop pesto out of bowl and into a mixing bowl. Add parmigiano to taste; add salt and pepper. Makes about 6 ounces of pesto. Keeps for up to one week in an air-tight container in the refrigerator.
For ˝ pound short pasta such as penne, add about 2 tablespoons of pesto to cooked pasta and stir until pasta is well coated.
