What a crazy week! It's been one CRASH after another. First my computer (oh My Gawd, you don't even want to know! Freak Out!), and then the site that houses the KITT Club newsletter!!! A freak-out of another kind!!! Seriously, if all that didn't drive me to eat, to drink or scream this week, well ... then ... I'm CURED!

Dear Peg ~ Great questions, Peg! I did a bit of research and here's what I uncovered. Warning: It ain't pretty! AND to be clear, I'm not a dietician or a nutritionist.
Studies show that artificial sweeteners can:
Stimulate your appetite (spike insulin levels which will increase hunger very shortly after eating).
Increase carbohydrate cravings (consuming sweeteners will cause your sweet tooth to actually get worse).
Stimulate fat storage and weight gain (increase in insulin levels cause you to get hungry and eat more).
In addition, research suggests that aspartame (NutraSweet®) and sucralose (Splenda®) - the sweetening agents in artificial sweeteners - can contribute to other side effects. Even though sucralose, the sweetening agent in Splenda®, is actually made from sugar (sucrose), Splenda® then adds three chlorine molecules to these sugar molecules to create the final product.
In a number of animal studies, researchers found that sucralose can cause:
Shrunken thymus glands (up to 40 percent shrinkage)
Enlarged liver and kidneys
Atrophy of lymph follicles in the spleen and thymus
Reduced growth rate
Decreased red blood cell count
And, there appears to be some evidence that aspartame can trigger or worse the following diseases:
Brain tumors
Multiple sclerosis
Epilepsy
Chronic fatigue syndrome
Parkinson's disease
Alzheimer's disease
Mental retardation
Lymphoma
Birth defects
Fibromyalgia
Diarrhea
The bottom line is this. You may want to further look into this and decide for yourself if you want to continue to drink artificially sweetened drinks. Do not rely solely on my merely reporting what I've read.
Needless to say, water is always a good way to quench your thirst, cleanse your body and it promotes weight loss! If you do find good research that you'd like to share, please send it in. We're in this together, folks! Let's pool our brain power. ~ OLofWL

I love to have my cheesecake
but the praying is just dumb.

Dear OLofWL ~ I just finished reading both of your books - All Is Forgiven: Move On and Our Lady of Weight Loss. Thanks a million for all the projects and recipes, as well as the insight. My first project was the excuse haiku.
Here it is:
Postmenopausal
Member of the clean plate club;
I'll start on Monday.
Ingredients: 8 ounces wide egg noodles * 2 cans tuna in spring water, drained * 1/2 cup low fat yogurt, plain * 1/2 cup sliced black olives * 1/4 cup green olives * 1/2 teaspoon salt * 1/4 teaspoon pepper * 1/8 cup butter * 1 cup breadcrumbs * 1/4 cup Parmesan cheese * paprika * additional black olives for garnish
Instructions: Preheat the oven to 350 degrees * Boil and drain noodles * In a medium sized bowl, mix together the noodles, tuna, yogurt, black olives, green olives, salt and pepper. * In a small bowl, melt butter. * Add the bread crumbs and cheese. * Pour the breadcrumb mixture over the noodle mixture. * Sprinkle with paprika. * Bake the casserole uncovered for 35 minutes. * Garnish with black olives.
